In the past, the presence of sake at a meal was a dry sake that did not interfere with the food.
For example, after eating tuna at a sushi restaurant, the main dish was the food, just like refreshing your palate with a cup of tea (green tea).
We believe that sake is a kind of seasoning that makes food even more delicious.
We invite you to experience the excellence of authentic Japanese cuisine served with delicious sake.
Purchasing / Ingredient

We visit the Toyosu Market and purchase from reliable suppliers such as “Shinoichi”.
Cooking

We use ingredients that go well with sake. All of our dishes are handmade and we do not use any chemical seasonings.
The soup stock is extracted from the best bonito flakes without blood, the sashimi soy sauce is our special Tosa soy sauce, and the ponzu (Japanese citrus juice) has been added and made since the establishment of the restaurant.
Meal

The second generation manager, Kikuta, who trained under his predecessors who worked at Misago Sushi in Koishikawa, Tsukasa in Ginza, and Uozen in Yanaka, has maintained the taste of the restaurant.
Sake

The restaurant always has more than 70 kinds of sake available from all over Japan.

Our main business is operating a trading company that sells machinery, chemicals, and filling lines for manufacturing brewed products such as sake, shochu, miso, soy sauce, and vinegar.
We have many customers, especially sake brewing companies, and we opened the store because we wanted as many people as possible to know the depth of flavor of sake.
We take pride in our role as an antenna store for sake, spending a lot of money on ingredients and providing good quality products at reasonable prices.

In honor of Nihonbashi, we aim to offer Edo cuisine from Shotaro Ikenami’s novels and excellent sake from all over Japan. We always have more than 70 varieties of sake on hand, stored in temperature-controlled, anti-oxidizing, UV-cut refrigerators, and are continuously working to maintain quality.
